Wheat Thins Copycat
1 3/4 cups whole wheat flour
3/4 teaspoon salt
1 1/2 cups flour
1/3 cup oil
1 cup water
Additional salt or onion salt
Combine the flours and salt. Add the oil and water to the mixture. Knead as little as possible to make a smooth dough. Divide the dough into four equal parts. Roll each part out very thin to fit an entire cookie sheet. (Yes, you might think that is too thin, but trust me on this one.) Score with a knife in the desired size. Prick each cracker a few times with a fork. Sprinkle dough lightly with salt or onion salt. Bake at 350 degrees until light brown and crisp, about 30-35 minutes.
