The first time I tried this recipe, I
followed it exactly, which included using the whole wheat berries and making the batter in a blender. Everything mixes up quickly and easily and
then you can pour the batter right from the blender. Fabulous.
But what if there’s no electricity?
Like you’re living in California and PG&E is cutting your
power? Again. So there are two options here. Both work very well.
With a blender:
1 cup whole wheat berries
1/3 cup dry milk
1 1/3 cups water
1/2 cup oil
2 eggs (or 2 tablespoons powdered eggs + ¼ cup water)
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
Combine the wheat kernels, dry milk, and water in the blender and
blend for three to five minutes. Add
remaining ingredients and blend for a few seconds. If the batter is too thick, add water one
tablespoon at a time until you reach the desired consistency. Cook on a lightly greased griddle or frying
pan over medium heat.
By hand:
1 1/4 cups whole wheat flour
1/3 cup dry milk
1 1/3 cups water
1/2 cup oil

2 tablespoons sugar

Stir in water and oil. If the

Variations:
Banana-Walnut: Substitute a
mashed banana for the oil and add into 2 tablespoons of finely chopped walnuts. For a truly divine breakfast, top with
caramel syrup instead of the usual maple.
Blueberry: Add in ½ cup
blueberries.

ReplyDeleteA search online revealed a few possibilities. 1. Add an extra egg. 2. Add an additional 1/4 cup oil. 3. Substitute 1/4 cup cornstarch for 1/4 cup of flour. I would recommend making one change at a time until you achieve the desired result. Let us know how it works!
