Double Chocolate Zucchini Cookies—Good Eats at the TEOTWAWKI Cafe

The end-of-summer quest to discover great recipes for all the zucchini continues.  With the family favorite I-don’t-care-if-it’s-food-storage-or-zucchini chocolate cake and the I-prefer-boxed-but-these-are-pretty-good zucchini brownies that we tried out last month, I thought there might be a recipe for chocolate chip zucchini cookies worth trying.  I decided on the double chocolate one as I thought it might be a good idea to have the cocoa powder help hide the green flecks of zucchini peel, especially since I was taking these to a church meeting.

Double Chocolate Zucchini Cookies

1 cup packed brown sugar

½ cup butter

1 egg

1 teaspoon vanilla extract

2 cups whole wheat flour

1 teaspoon baking soda

½ teaspoon salt

2 tablespoons cocoa powder

1 cup finely shredded zucchini

1 cup chocolate chips

In a medium mixing bowl, cream together the brown sugar and butter.  Beat in the egg and vanilla.  In a separate bowl combine the flour, baking soda, salt, and cocoa powder and then stir this mixture into the wet ingredients.  Fold in the zucchini and chocolate chips.

Chill dough in the refrigerator for 1 hour.

Preheat oven to 375°F.  Drop dough by rounded spoonfuls onto the cookie sheet.  Bake for 10-13 minutes.

Family reviews:  The Picky Eaters, Doc, Becky, and I were the taste testers.  Aaron snoozed, so he lost out.  (Actually, he was having troubles controlling his blood glucose all day, so he was sad.)  We all agreed there was nothing objectionable in the flavor, but they wouldn’t be our go-to.  QOTPE inquired about the sugar.  With only 1 cup in the batch, we felt it needed more for our tastes.  These cookies are also cake-like, unfortunately, and thus not a huge winner for us.  However, in all fairness, it should be noted that the recipe received 4.7 stars with 14 reviews, so it may just be our family.  In discussing our evaluation of this cookie. KOTPE and I both noted that as far as cookies go, these are relatively healthy.  Low sugar, whole wheat, zucchini.  They will satisfy children who tend to be cookie monsters.  QOTPE noticed that as well, and remarked that she liked them much better than some of the “healthy” cookies that she’s tried in the past.
