Oh Henry! Candy Bar Copycat

As I served these to the family after dinner, my husband and I told the kids that these were an "old" candy.  We saw them for sale when we were younger, but we never purchased them ourselves.  We only got them at Halloween, when older folks would pass them out.  Neither one of us could even say what they tasted like, other than we knew they had chocolate.  

The original Oh Henry! candy bar contained actual peanuts instead of peanut butter and oats, with caramel and fudge as well, and everything coated with chocolate.  So in my opinion, without caramel and peanuts, this isn't even close.  This version is a little bit healthier.  Take that for what it's worth.  

But the kids all said it was a pretty acceptable treat, and most had at least two.  Becky and I both liked that we could eat one or two and yet, unlike with brownies, not feel like we wanted to finish the whole pan. 

Oh Henry! Candy Bar Copycat

1 cup brown sugar, packed

1/2 cup butter or coconut oil
1/2 cup chunky peanut butter

1/2 cup light corn syrup

1/4 teaspoon salt

1 teaspoon vanilla extract
4 cups oats

1 cup chocolate chips, divided

In a medium saucepan over moderate heat, combine the first six ingredients.  Heat until butter/oil is melted and sugar is dissolved.  Remove from heat.  Stir in the oats and half of the chocolate chips.  Press into greased 9x13” pan.  Bake at 375°F for 15 minutes.  Immediately sprinkle with remaining chocolate chips and spread over pan when melted. Cut into bars.  Store in an airtight container.
