Dehydrated Tomatoes

If you've been reading the blog from the beginning in October and really paying attention, you might have noticed the theme of Saturday's Expanded Food Storage posts is an all-American meal of hamburgers and fries.

And then you come across today's post of "Dehydrated Tomatoes," and you become a little teary-eyed.  Because you're depressed to see it's such a boring topic, or a little excited at the idea of having a tomato to put on your hamburger.

Now there is a whole lot you can do with dehydrated tomatoes, but in keeping with the theme, we're going to start with dehydrating tomatoes whose ultimate purpose in life is to be re-hydrated for putting on hamburgers.

It's important to note that there actually is a difference between dried food and dehydrated food.  Dried food still has some water content in it so it is much more pliable, and it has a much shorter shelf life.  On the other hand, dehydrated food has had as much water removed as possible.  It is crispy and has a much longer shelf life, which is what we as prepared people want.

I started with my garden tomatoes, the ones I had to pick super early (October 15th-ish because of super early freezing temperatures--sad), and that had been ripening in the atrium.  They got washed and then dipped in boiling water to  remove the skins from some tomatoes.  (I couldn't tell a difference in flavor between the skinned and non-skinned tomatoes, however, I must admit, I do not have super-sensitive taste buds.) I'm not entirely convinced that removing the skins is necessary, but I was wondering if the skin imparted a bitter flavor to the re-hydrated tomato, so I wanted to be able to do a side-by-side comparison.

I then sliced them up and put them on the dehydrator trays.  Now most instructions say to dehydrate tomatoes at 125-135 degrees, and of course the number of hours is going to vary depending on the thickness of your slices and your humidity.  But I don't want to cook my tomatoes at all.  I want to be able to use them as fresh--hopefully--and I want them to retain their beautiful color.  So I set the thermostat to 90 degrees.

And because I want as much moisture out as possible, I've let them go 18 hours now.  They are crispy.  They are done!

Because they are so crispy, they need to be removed from the trays carefully.  And because these beautiful babies are for hamburgers, they are stacked in a pint canning jar.  Naturally, there will be some broken pieces.  These are set aside for other uses.  More on that later.

Once the jar is full, it is vacuum-sealed (or you could use an oxygen absorber).  Glass jars and vacuum sealing are the only way to keep moisture out.  If you live in the desert, you might be able to forgo the vacuum sealing.  Everyone else better do it for sure.  Trust me on that.

Now, for the test.  How long does it take to re-hydrate?  Well, more than the few minutes it takes to make a hamburger.  If you are putting them on your hamburger, start re-hydrating before you do anything else.

I was really, really hoping the tomato slices would re-hydrate well and regain their original thickness and texture.  I checked them every half hour for about four hours.  Unfortunately, they never regained their original size and there was no difference between 30 minutes and 4 hours of re-hydration.  So they don't have quite the texture and juiciness desired for a great hamburger.

But you know what?  They look great!  No one else will know how thinly you originally sliced the tomato.  They'll just be amazed at your ability to slice a tomato so thinly.  Having a bright red tomato to put on hamburgers during the off-season will be greatly appreciated.  And in times of crisis, being able to maintain some normalcy is important to keeping up morale.  Being able to put tomatoes on hamburgers (and even being able to have hamburgers!) is a small, but very simple and easy thing to do.


What about the rest of the dehydrated tomatoes?  The broken pieces?  Or what about dehydrating tomatoes for other purposes?  Yes, I'm getting to that.

To turn your dehydrated tomatoes into powder, simply place them in your blender and give them a whirl until they are powder.  That's it.

However, some blenders may cause the tomato powder to get a little heated in the process.  If that is the case, spread your powder on a plate or tray and let cool completely.  If you have purchased tomato powder in the past, you will recall that it is a nice, tomato-ey red.

Your home dehydrated tomato powder will not have that same bright color, but will be of a more orange-rust color.  I'm not quite sure why that is, but anyway....  After the powder is completely cooled, transfer it into a glass jar that can be vacuum-sealed for long-term storage.  You do not want moisture getting in and spoiling all your tomatoes--and your work.

Use your tomato powder to thicken tomato-based soups or stews.  As a general guideline, for tomato sauce, combine in a 1:4 ratio of powder to water.  For tomato paste, combine in a 1:2 ratio of powder to water.  But for best results, and for just the thickness you want, don't use these measurements.  Just begin with some tomato powder and add water until you get the consistency you want.

Expanded Food Storage--Home Canned Tomato Sauce

In my neck of the woods here in Northern Nevada, it's almost time for tomatoes to go into the garden.  Actually, in a good year I would have started seeds in February, transplanted in April and put the Wall o' Waters around them, and then be picking by the Fourth of July.  However, this is not a typical year.  My husband will be losing his job at the end of June.  (He's in the mining industry, and the little company he currently works for was acquired by a larger company based in Canada.  It's just the way it is in mining.  That's why mining companies have nice severance packages.)  Anyway, it doesn't look like he'll be finding a job locally, so that means a move is in our future.  And because I have to focus much more on packing and painting, I haven't had the time to start tomato seeds.  I'll just be buying plants this year.

But the fact that I probably won't get to harvest any of the tomatoes I plant this year makes me a bit sad.  Because that means my chances of putting up home-canned tomato sauce are slim to none.  I really love preserving my own tomato sauce, even though the store-bought counterpart is really cheap.

For one, it is really easy to do and I get to feel a great sense of accomplishment, more than I do with most other home-canned items.  I'm not quite sure why that is.  It just makes me feel so good.  Maybe it's because I'm doing it to help my family be healthier.  I have to wonder, why exactly is it that almost all commercially canned tomato sauces have "natural flavor" added.  Why does store-bought tomato sauce need "natural flavor" added?  What is wrong with the flavor that tomatoes naturally have?  And finally, like pineapple, tomatoes are very acidic and have a tendency to spoil in their cans much more quickly than other fruits and vegetables.  But because home-canned tomato sauce is preserved in glass, the problem of spoiling quickly in cans is entirely avoided.

All canning guides contain directions for canning tomato sauce, but their method of producing the sauce isn't as easy as mine, so my directions for making the sauce are below.  It came about as I remembered something I learned in college biology:  freezing ruptures cell walls, allowing fluid, usually water, to escape.  I reasoned that if I was able to drain off the water, then the sauce wouldn't have to be cooked down.  It would make far less mess and take much less time.  My hypothesis proved correct, and I've been canning tomato sauce this way ever since.

Canning tomato sauce at home is really easy.  In addition to your regular canning supplies, you will need a large wire strainer/colander, a juicer that removes the seeds for you (I use a Champion) or an applesauce mill or food mill plus a strainer to hold back the seeds and skins.

The process for turning your tomatoes into sauce is as follows:
1.  After harvesting, wash your tomatoes.  If they are large, core and quarter or slice them as well. Smaller tomatoes need only be cut in half.
2.  Pack tomatoes into plastic containers or freezer bags and place in freezer.  Freezing the tomatoes will cause the cells walls of the tomatoes to rupture.
Repeat these first two steps as often as you wish until you have the size of batch you would like for canning.
3.  Thaw tomatoes thoroughly, perhaps even overnight.  Thawing allows the water in the tomatoes to be released.
4.  Drain tomatoes through a colander and discard the liquid.
5.  Run the thawed tomatoes through your juicer or food mill, and if using a food mill then pass the resulting sauce through a strainer with mesh that is just fine enough to hold back the tomato seeds.

Bring sauce to a boil and then pour into canning jars.  Add salt and citric acid per directions from your canning guide and process for the correct amount of time for your altitude and jar size.

Good Eats at the TEOTWAWKI Cafe--Wonderful Salsa

If you haven't started planning or planting your garden yet, you will be soon.  And the most commonly planted vegetable is the tomato.  And if you're even moderately successful, you will have an abundance of tomatoes.

While you rejoice in them at first, along towards the end of the season you begin to wonder what to do with them all.

Make salsa.  It's an important condiment for eggs and all things Mexican, comfort food that goes great with tortilla chips, and essential to making quick Mexican rice.  One or two batches of this will have your family set in salsa for the next year.

The basic recipe comes from GeniusKitchen.com.  Fortunately for everyone on the planet, lists and measurements of ingredients are not protected by copyright; the directions for preparing are, but mine differ substantially, so no worries there.  However, if you want to see the original, the link is provided below.

Wonderful Salsa
Yields 7-8 pints

8 cups tomatoes, peeled, chopped, and drained
2 1/2 cups chopped onions
1 1/2 cups chopped bell peppers
1 cup chopped jalapeno peppers, seeded
6 garlic cloves, minced
2 teaspoons cumin
2 teaspoons pepper
2 tablespoons canning salt
1/3 cup sugar
1/3 cup white or apple cider vinegar
15 ounces tomato sauce
12 ounces tomato paste

Basically, you combine everything in a large pot and bring to a boil for ten minutes.  Ladle into canning jars with one inch of head space and process for ten minutes in a boiling water bath.  If you are at a higher altitude, you'll have to increase the processing time.  Consult your canning guide for information on that.

Helpful hints:  Always wear gloves for removing the seeds from hot peppers.  If you do not, you will be really sad.  Do not deceive yourself into thinking it's just one or two peppers.  If you do, plan on cursing yourself and soaking your hands in milk for the next 18 hours.

You do not have to use canning salt.  Iodized salt or plain salt will work just fine.  But the canning police will know.  (Additives in iodized and plain salt may cause cloudiness in your salsa, but are perfectly safe to use in canning.)

Do not alter the recipe, do not add in a few more tomatoes or peppers or cut back on the vinegar.  These are all very important to maintaining the proper level of acid in the salsa for safe canning and preservation.

This salsa may be canned in 1/2 pints, pints, or quarts.  If you are planning for a time of no refrigeration, you might wish to use smaller jars.

Cast Iron Pans To Boost Iron Intake

Every once in a while someone says something along the lines of the importance of using cast iron pans to boost your supplemental iron intake, or one of the advantages of using cast iron over other kinds of pans is that you can get your iron instead of having to take a supplement.
What very few people seem to understand, however, is that those statements are only partially true.

An awful lot depends on how well-seasoned your pan is, what you're cooking, and for what amount of time.

Here's what you need to know:
  • Older, well-seasoned pans leach less iron than newer, less seasoned pans.
  • Along the same lines, pans that food does not stick in release less iron than pans that food does stick in.
Those points should make sense.  If there's no real contact or exchange occurring because the food isn't sticking, there isn't going to be any additional iron in the food.
  • Iron comes in different forms.  The iron in a cast iron pan is in the non-heme form, which is not assimilated, or taken up by the body, as easily as the heme form of iron.  This latter form is what is found in red meat.  And that is why red meat is a good source of iron.  
  • Vitamin C and acidity help release iron from the pan and get it into your food.  So when using cast iron, cooking foods with tomato sauce or lemon juice or vinegar is going to get more iron into your food.
  • Cooking with liquids, cooking longer, and stirring more often will all also get more iron into your food.  The more contact, the more opportunities for contact with the iron pan, the more iron will get into your food.  
There isn't an exact science to this, and unfortunately, one of the key reasons for using cast iron--the ability to season a pan well and develop a natural, yet virtually non-stick surface, actually prevents you from getting iron into your diet.  If you've got a really well-seasoned pan, the amount of iron you're getting is virtually zero.  You'll have to boost your intake in other ways.  Unless you want to scrub the pan every night, which is totally an option, and may be what you need to do in a collapse situation if you're anemic.
