Good Eats at the TEOTWAWKI Cafe--Whole Wheat Blender Waffles and Coconut Syrup

(In case anyone was wondering, I really do try to format this blog nicely.    I have everything perfectly formatted in Word before pasting it in here, and Blogger messes with everything.  Blogger insists on empty lines and I cannot figure out a way to eliminate them.  I have been sorely tempted to change to Wordpress.  But I hate change and will resist it as long as possible.)

This recipe is perfect for those who do not yet have a grain mill and for families looking to incorporate a little more whole grain into the diet, without overwhelming the taste buds.  If needed, all-purpose flour can be substituted for some of the whole wheat. 

Whole Wheat Berries version
1 cup plus 1 tablespoon whole wheat berries
1/4 cup powdered milk

1 cup water
2 eggs
1/4 cup oil
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt

Blend wheat berries, powdered milk, and water on high speed for 4 minutes or until batter is smooth. Add in remaining ingredients and blend on low for 1 minute or until mixed. Cook on hot waffle iron. Makes 10 waffles.

Whole Wheat Flour version

1 1/4 cups whole wheat flour

1/4 cup powdered milk

1 cup water

2 eggs

1/4 cup oil

2 tablespoons sugar, honey, or corn syrup

2 teaspoons baking powder

1/2 teaspoon salt

First combine flour, powdered milk, and water in blender on high speed for 30 seconds.  Add in remaining ingredients and blend on low speed for 1 minute or until mixed.  Cook on hot waffle iron.  Makes 10 waffles.

Coconut Syrup

1 can (13.5 oz) coconut milk

2 tablespoons cornstarch

2 cups light corn syrup

1/2 cup granulated sugar

1/2 cup sweetened shredded coconut

In a medium saucepan over low heat, combine coconut milk and cornstarch, stirring occasionally until mixture thickens.  Stir in remaining ingredients and heat until sugar dissolves.  Serve warm.

Coconut-Flavored Syrup

1/4 cup butter

1/4 cup coconut oil

3/4 cup buttermilk (3/4 cup water, 3 tablespoons powdered milk, 2 teaspoons lemon juice or vinegar)

1 cup sugar

1/2 teaspoon baking soda

1 teaspoon coconut flavoring

In a medium saucepan over moderate heat, combined first four ingredients.  Heat until butter melts and sugar dissolves, then boil 1 minute.  Remove from heat and add baking soda and flavoring. Serve warm.
