Thousand Island dressing was my go-to for salads as a child. But tastes change for all of us as we mature, and I moved on to other options. And then as a parent, I really hated buying salad dressing at all—so many mystery ingredients that sounded like they needed to be in a chemistry lab rather than my family’s food.
Unfortunately, my husband has no such aversions. He also enjoys shopping and using digital coupons at our grocery store. It often means coming home with stuff I would never ever use. Including bottles of dressing. Fortunately, with his new job and our 35-minute drive to the store, he is doing far less grocery shopping.
Which also means that when he made patty melts for dinner yesterday, we did not have any Thousand Island dressing on hand. It was almost a crisis. But with the internet still up and available, disaster was easily averted with a Google search and five minutes to whip this dressing together. It’s easy as can be and uses ingredients you probably already have on hand or will be able to produce on your own when grocery stores aren’t open anymore.
Thousand Island Dressing
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon distilled white vinegar
2 teaspoons sugar
2 teaspoons sweet pickle relish
1/2 teaspoon onion powder
1/8 teaspoon salt
Dash pepper
Combine all ingredients in a small bowl, stirring well to blend. Chill for several hours in the refrigerator (if you have time).
