Super Moist Whole Wheat Chocolate Cake

With Luke and Sarah moving into their new house last week, everyone else was involved with cleaning, painting, and actual moving of boxes and furniture.  Providing meals was my job.  I figured it wouldn’t be a great time to experiment with dinner recipes and hungry and tired people, so I kept with the tried and true chicken and rice casserole, French dip, and ravioli.  Dessert, however, was fair game in my book. 

I’d had this chocolate cake recipe that I’ve wanted to try for a while.  Something that wasn’t zucchini cake (fabulous as that is) and that was all from scratch.  That it didn’t require eggs (fresh or powdered) was a bonus, but also made me wonder whether it would be very good.  Then add in the fact that it called only for whole wheat flour, no white flour, and well, color me skeptical.

So here’s the recipe:

Super Moist Whole Wheat Chocolate Cake

1 1/2 cups whole wheat flour

1/2 cup granulated sugar

1/2 cup dark brown sugar

3 tablespoons cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup water

1/3 cup oil

1 tablespoon white vinegar

1 teaspoon vanilla extract 

In a medium bowl, combine all the dry ingredients.  Make a well, and in the wet ingredients, and beat until smooth.  Pour the batter into a greased 9” pan.  Bake at 350°F for 30-40 minutes.  Insert a knife near the center to test for doneness.

This recipe can be doubled to make a layer cake.  

Family reviews:  Well, instead of baking this cake in a regular square or round pan, I chose to mix things up a bit and use a pie plate.  I also topped the cake with some chocolate chips and sprinkled nuts on half of it for the nut people.  Perhaps it was due to the fact that I was feeding an exhausted, ravenous crew excited to eat and chatting about all the events of the day.  And perhaps it was due to the fact that I deviated from the normal chocolate cake presentation and messed with their minds.  The only question about the provenance of this cake, from QOTPE naturally, was whether it was from scratch.  No accusations about whether beans or yogurt or some other such atrocities were involved. 

It just disappeared.  Nice.  Now, it won’t replace the family favorite sour cream chocolate cake that the kids all request for their birthday, but it is really nice to have a recipe for a simple chocolate cake from scratch that doesn’t require any fresh ingredients.

  1. this is my mother's 'Happy Valley Chocolate Cake' from WWII. the dry ingredients were mixed in the baking pan, wells made, liquid ingredients added to each well, mixed well & baked. Also makes great cupcakes. And, never any left. Favorite of mine (I'm 77) to serve to company with whipped cream.
